In the mood for a healthy and flavourful dish? This Pinsami Sicilian-style Pinsa will surprise you with its bold Mediterranean flavours.

  1. Wash the endive in cold water. To preserve its colour, blanch it briefly in boiling water, then transfer it immediately to ice-cold water.

  2. In a pan, heat olive oil with crushed garlic, anchovy, and capers. Once the anchovy has melted, add the endive and sauté for a few minutes until just tender but still crisp.

  3. Season with salt and pepper, or add fresh chilli for extra spice.

  4. Top the Pinsami Pinsa with mozzarella, the sautéed endive, and blanched cherry tomatoes.

  5. Bake at 250°C for about 5 minutes.

  6. Once out of the oven, finish with anchovy fillets, caper berries, soaked raisins, and a drizzle of extra virgin olive oil.
