- Marinate the beef: In a bowl, combine the thinly sliced rump steak with dark soy sauce, sesame oil, salt, black pepper, baking soda and corn flour. Mix well to coat the beef evenly and leave to marinate for 30 minutes.
- Prepare the noodles: Cook the noodles according to the packet instructions. Drain and set aside.
- Mix the stir-fry sauce: In a small bowl, combine the dark soy sauce, Shaoxing wine, oyster sauce, crumbled beef stock cube and cumin powder. Stir until well combined.
- Cook the beef: Heat a wok or large frying pan over high heat. Add a little oil if needed, then stir-fry the marinated beef in batches until browned and cooked through. Remove from the pan and set aside.
- Sauté the aromatics: Add the vegetable oil to the same wok. Stir-fry the garlic, grated ginger and sliced spring onion for about 30 seconds until fragrant.
- Add the vegetables: Add the Darta frozen red and green peppers and green peas directly to the wok. Stir-fry for 4–6 minutes until heated through. Add the bok choy and cook for another 1–2 minutes until slightly wilted.
- Combine the ingredients: Return the cooked beef to the wok and add the prepared stir-fry sauce. Toss everything together, then add the cooked noodles and mix well until everything is evenly coated and heated through.
- Garnish and serve: Divide the beef and veggie noodles between serving bowls. Garnish with sesame seeds and sliced spring onions, if desired. Serve immediately and enjoy!
Recipe Tip: Darta frozen peppers and green peas can be added straight from the freezer, making this stir-fry a convenient option for busy weeknights. For the best texture, cook the beef in batches over high heat to help it brown without releasing too much moisture.
