Beyond Chicken Burger with Peas & Guacamole

Ingredients

FOR THE HAMBURGER
2 brioche buns toasted to serve
2 Beyond Chicken Burger
Chopped lettuce
1 red onion cut into slices
Jalapeno or tabasco (optional)

FOR THE PEAS GUACAMOLE
100 grams of frozen peas
Small onion chopped
Handful of chopped coriander
1⁄4 teaspoon cumin
2 tablespoons (vegan) Greek yoghurt
Squeeze 1 lime
Fine sea salt and pepper

Instructions

1. For the pea guacamole: blanch the peas and add them to the pan with the rest of the ingredients.

2. Blend in a food processor and beat until combined.

3. Prepare the Beyond Chicken Burger with a little olive oil in a frying pan.

4. Fry on both sides, brown in 6 minutes (medium heat).

5. Place some lettuce on the bottom of each bun. Place the Beyond chicken burger on top, a dollop of guacamole and some slices of red onion.

6. Serve with tabasco and jalapenos for some extra spice.
