Beyond Moroccan Ras-el-Hanout (Couscous with Meatballs & Yoghurt Sauce)
Ingredients
FOR THE COUSCOUS
250 gr Regular couscous
250 gr Pearl couscous
3 tbsp Ras-el-hanout spice mix (coriander, ginger, smoked
paprika, allspice, cardamom, mace, nutmeg,
turmeric, cayenne, cloves and rose petals)
200 gr Pomegranate seeds
Olive oil
Pinch of salt
Pepper
Handful of chopped fresh mint
Handful of chopped flat-leaf parsley
Handful of fresh dill
FOR THE MEATBALLS
1 Pack of beyond meatballs
1 Chopped red pepper
1 Chopped zucchini
1 Chopped eggplant
1 tbsp Olive oil
Salty Pepper
FOR THE SAUCE
1 Roasted pepper
(from a jar)
200 gr Regular vegan yoghurt
1 tbsp Tahini
1 tsp Salt
1 tsp Pepper
2 tbsp Olive oil
Instructions
STEP 1: Place the regular couscous in a large bowl and then add 1 tablespoon of olive oil, a pinch of salt and 2 tablespoons of Ras-el-Hanout spice mix and stir well. Add just enough boiling to cover the couscous then quickly cover the bowl with plastic wrap or a plate.
After about 20 minutes, gently run a fork through the couscous to loosen the grains and to seperate.
STEP 2: Place the pearl couscous in a saucepan and heat it for a few minutes over low heat. Pour water over it and add a tablespoon of Ras-el-Hanout spice mix and a teaspoon of salt and bring it to the boil. Cook gently for 10 minutes until the couscous is soft and combine it with the regular couscous then add the finely chopped herbs and stir well. Set the couscous aside.
STEP 3: Pour 2 tablespoons of olive oil into a frying pan, add the chopped vegetables once the oil is hot and fry for about 10 to 15 minutes. Finally add the Beyond Meatballs and fry the meatballs about 10 minutes until they are well done.
STEP 4: To make the sauce, put the drained red pepper in the food processor, together with the yoghurt, tahini, salt, pepper, olive oil and mix well.
STEP 5: Spread the sauce evenly on a large serving bowl, add the couscous mix and finish it off by placing the meatballs and vegetables on top and adding some fresh herbs and spices
STEP 6: Sprinkle pomegranate seeds over it.
