Beyond Indian Spiced Kofta

Ingredients

FOR THE KOFTA
1 x pack of Beyond Mince®
1/2 tbsp curry paste, of your choice
1 clove garlic, minced
2 cm piece of ginger, finely chopped

FOR THE RAITA
100 g Greek plant-based yoghurt
5 g mint leaves, finely chopped
1/2 lime, squeezed
1 tsp garam masala
1/2 cucumber, diced
100 g cherry tomatoes, quartered sea salt,
to taste

FOR THE MANGOS SALSA
1/2 ripe mango, cubed
1/4 red onion, diced
1/4 red pepper, finely chopped
handful of coriander leaves chopped
1/2 lime, squeezed
pinch of sea salt
To serve with it

Instructions

Mix the Beyond Mince® with the rest of the Kofta ingredients in a large bowl. Cover and put the mixture 1 hour in the refrigerator.

Form two sausages around two metal skewers. Store in the refrigerator for at least 30 minutes.

For the raita, place the yoghurt in a bowl and mix in the mint, lime juice and garam masala. Add
the cucumber, cherry tomatoes and a pinch of sea salt.
Mix well to combine, add if need more salt. Refrigerate until ready to serve.

To make the mango salsa, combine all the ingredients and refrigerate until ready
to serve.

Preheat the barbecue. When you’re ready to cook, grease the grill with oil and cook the skewers
directly over the heat, turning frequently, for 10 minutes, or until done.

When the koftas are ready, set them aside and heat the flatbreads on the grill. Serve with the raita,
mango salsa and warm flatbreads.
