Beyond Smash-Style Double Burger with Chilli Jam and Caramelised Onion
Ingredients
FOR THE CHILL JAM
1 red pepper, deseeded and chopped into chunks
2 large red chillies, deseeded and chopped into chunks
1/2 tsp dried red chilli flakes (optional)
250g caster sugar
150ml cider vinegar
FOR THE BURGER
3 tbsp vegetable oil
2 red onions, finely sliced
2 tbsp soft brown sugar
8 x Beyond Smash Burger patties, defrosted
8 slices plant-based cheese
8 rashers plant-based streaky bacon
4 x plant-based brioche style burger buns
Instructions
STEP 1. Make the chilli jam by adding the chopped red pepper and chillies to a food processor and blitzing until finely chopped. Add to a heavy-bottomed saucepan on a low heat along with the caster sugar and vinegar. Stir until the sugar has dissolved. Bring to a boil and let it bubble for 10-15 mins, then set aside to cool completely. Once cool, transfer into a sterilised jar.
STEP 2. To make the caramelised onions, place a large frying pan on a medium heat with 2 tbsp veg oil and cook the sliced onions for 15-20 mins until soft and starting to colour. Sprinkle over the brown sugar along with a pinch of sea salt and stir into the onions until the sugar has melted and is starting to bubble. Remove the onions from the pan and keep warm until you’re ready to serve.
STEP 3. Place the same pan back on a medium heat and add 1 tbsp veg oil. Add 4 smash burger patties to the pan and cook for 4 mins per side – for extra crispy edges, push down the tops of the patties with a spatula to flatten them as they cook. Top each patty with a slice of plant-based cheese for the last few minutes of cooking, then place on a warm plate and cover to keep warm. Repeat with the remaining 4 patties.
STEP 4. Meanwhile, cook the plant-based bacon according to the instructions.
STEP 5. When you’re ready to serve, spread some chilli jam on the bottom burger bun and top with a melted cheese patty. Add 1 rasher of plant-based bacon, followed by another patty and another rashers, then top with the caramelised onions and other burger bun half.
