Stir-Fry with Mango and Edamame

Ingredients

1 cup Darta Mango (frozen, thawed)

1 cup Darta Edamame (blanched or thawed)

1/2 cup Darta sliced onions

1 bell pepper (sliced)

1 tablespoon olive oil

1 tablespoon soy sauce (low-sodium)

1 tablespoon sesame oil

clove garlic (minced)

1 teaspoon ginger (grated)

sesame seeds (for garnish)

Fresh coriander or green onions (for garnish

Instructions
  1. Heat 1 tbsp olive oil in a pan and sauté minced garlic and grated ginger.
  2. Add Darta sliced onions, bell peppers, edamame, and 1/2 cup Darta corn. Stir-fry for 3-4 minutes.
  3. Toss in Darta mango and drizzle with soy sauce and sesame oil. Stir for another minute.
  4. Garnish with sesame seeds and fresh cilantro.
