Beyond Meatball Gyros
Ingredients
- 1 package Beyond Meatballs
- 1/4 cucumber, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, halved
- 1/4 cup sliced red onion
Tzatziki Ingredients
- 1/3 cup vegan greek yogurt or sour cream
- 1 cup grated, strained cucumber
- 1 tbsp olive oil
- 1 tbsp fresh dill
- 1/2 tbsp lemon juice
- 1/4 tsp salt
- a small clove of garlic, minced

Bursting with Mediterranean flavours, these plant-based Beyond Meatball Gyros are perfect for a quick weeknight dinner. Made with juicy, plant-based meatballs nestled in warm, soft pita bread, topped with crisp veggies and a creamy, tangy sauce.
- Mix all the Tzatziki ingredients together in a small bowl.
- Next, cook the Beyond Meatballs for 7-8 min over medium heat.
- While they are cooking, slice your cucumber and red onion. Half a handful of cherry tomatoes and greek olives.
- To assemble, spread a generous serving of hummus on each flatbread then top with Beyond Meatballs, cucumbers, onions, tomatoes, olives and tzatziki. Garnish with fresh parsley to serve.
