Broad Bean Green Salad

Ingredients
For the warm vegetable mix
  • 2 cups Darta broad beans
  • 1 zucchini, chopped

  • ½ leek, sliced

  • Handful of sugar snap peas

  • Spray oil (for cooking)

For the salad
  • Fresh spinach leaves

  • 1 small romaine lettuce, chopped

  • 100g feta cheese, crumbled

  • 2 tbsp Caesar dressing (or dressing of your choice)

  • 1 tbsp flax seeds

Serves: 2 (or 2-4 as a side)

1. Cook the vegetables

Heat a non-stick pan over medium heat and lightly spray with oil. Add the zucchini, leek, sugar snap peas, and Darta broad beans. Cook gently for a few minutes until the vegetables are tender but still vibrant.

2. Cool the mixture

Remove the vegetables from the pan and allow them to cool slightly.

3. Prepare the salad base

In a large bowl, combine the fresh spinach and chopped romaine lettuce.

4. Assemble the salad

Add the cooled vegetable mixture to the bowl. Sprinkle over the crumbled feta cheese and flax seeds.

5. Dress and serve

Drizzle with Caesar dressing (or your preferred dressing) and toss gently until everything is well combined. Serve immediately.
