Ingredients

PUULS Mussels

1 pack of PUULS Mussels
1 Large Red Onion
6 Cloves of Garlic
Fresh Lime Juice
3 Tbsp tomato salsa
1 Tsp Chili Flakes (Optional)
Salt & Pepper
1 Shot of Vodka
1/2 Tsp Red Wine Stock
150g Plant Based Cream

Instructions

Cook the Mussels

  1. Heat a non-stick pan over medium heat. Add chopped onion and garlic; sauté until soft and fragrant.

  2. Stir in tomato salsa, chili flakes, and lime juice. Simmer for 3–4 minutes.

  3. Add PUULS mussels and cook until heated through and coated in sauce, for 5-7 minutes.

  4. Add vodka, red wine stock, plant-based cream and season with salt & pepper. Stir until creamy and combined.

Prepare the Sweet Potatoes

  1. Preheat oven to 200°C.

  2. Toss Darta sweet potato chunks with olive oil, salt, pepper, garlic powder, and potato seasoning.

  3. Spread evenly on a lined baking tray.

  4. Roast for 25–30 minutes until golden and slightly crisp.

Assemble the Power Bowl

  1. In each bowl, add a serving of steamed jasmine rice.

  2. Top with roasted sweet potatoes.

  3. Spoon over the creamy mussels.

  4. Add your favourite vegetables for balance.

Garnish & Serve

  1. Squeeze over extra lime juice if desired.

  2. Serve immediately while warm.
