Pasta Rigatoni with Cherry Tomatoes and Mussels
Ingredients
1 tbsp of olive
3 cloves of garlic
1/2 tbsp of fresh chili
1 1/2 cups of mussels
1/3 cup of dry white wine
1 cup of red cherry tomatoes
1 cup of yellow cherry tomatoes
Salt and pepper
Fresh parsley
200g of rigatoni paste
Instructions
1. In a pan add olive oil, fry the garlic and fresh chili. Add the mussels and cook for a few minutes.
2. Remove the mussels from the liquid and transfer them into a bowl. Remove the liquid and transfer into a separate bowl.
3. Roughly chop up the mussels.
4. In the same pan add olive oil, cherry tomatoes and the liquid from the mussels. Lower the heat and cook until the tomatoes are tender. Add the fresh parsley, salt and pepper.
5. Add the mussels, cooked pasta, a drizzle of olive oil, mix and serve.
