Mixed Seafood Stew
Ingredients
- 2 cups of mix sea food
- 1 medium sized onion chopped
- 3 garlic cloves
- 1 chopped celery stick
- 1 carrot chopped into small pieces
- 2 tbsp of tomato paste
- 1 cup of dry white wine
- 1 cup of chopped cherry tomatoes
- 1 fish stock cube
- 1/2 cup of tomato sauce
- Fresh parsley and mint
- Lemon juice
- Olive oil
- Salt and pepper
- Toasted bread
- 1 cup of water
Instructions
1. Place a large pot over a medium heat add olive oil, onions and garlic. Let it cook for a few seconds.
2. Add carrots and celery mix them together with the onions.
3. And tomato paste and half cup of wine and cherry tomatoes. Cook until the tomatoes are soft.
4. Add the tomato sauce, fish stock and 1/2 cup of water. Cook for 15 minutes stirring occasionally.
5. Add the sea food mix the other half cup of wine, fresh herbs, lemon juice and the rest of the water. Cook for 25 minutes or until the carrot is soft and tender.
6. Serve it with toasted bread and fresh parsley on top.
