Shrimp Tacos
Ingredients
1 cup of frozen pink shrimp
3 taco tortillas
1/2 an avocado chopped into small chunks
1/2 cup of mixed lettuce
1 small carrot shredded
1 small tomatoes chopped into small pieces
1 tsp of lemon pepper
1 tsp of garlic powder
Mint yogurt sauce (Greek yogurt, olive oil, fresh mint salt and pepper)
Fresh lime juice
Fresh parsley
Olive oil
Instructions
1. In a pan add olive oil, the shrimp, fresh parsley, lemon pepper, garlic powder,salt and pepper. Cook for a few minutes or until the shrimp is fully cooked.
2. In a bowl Mix together the shredded carrots, mixed lettuce , olive oil , salt and pepper.
3. On each taco tortilla spread a bit of yogurt add the mixed lettuce and carrots, tomatoes, avocado and the cooked shrimp.
4. Serve them with a bit of fresh lime juice and fresh parsley on top.
