Creamy and Zesty Risotto with Puuls Seafood Mix

Ingredients

• 1 cup Arborio rice
• 1 tbsp olive oil
• 1 small onion, chopped
• 2 garlic cloves, minced
• 1/2 cup white wine (optional)
• 4 cups warm stock (chicken or fish)
• 300-400g Puuls Seafood Mix
• 1/2 cup grated Parmesan
• 2 tbsp fresh lemon juice
• 1/4 cup parsley, chopped (optional)
• Salt, pepper, and lemon zest to taste

Instructions

1. Sauté onion and garlic in olive oil until soft.
2. Stir in rice and toast for 1-2 minutes.
3. Add wine (optional), letting it absorb.
4. Gradually add stock, stirring until creamy (18-20 mins).
5. Sauté seafood mix in olive oil for 3-4 mins; season and set aside.
6. Combine seafood, Parmesan, and lemon juice with the risotto.
7. Season and garnish with parsley and lemon zest.
