Egg Fried Rice with Surimi Sticks

Ingredients

Easy Fried Rice
2 cups cooked rice
3 eggs
6 Viči surimi sticks  
¼ cup peas (defrosted)
½ cup raw grated carrot
1 tablespoon low salt soy sauce
1 teaspoon sesame oil

Extra toppings
Chopped spring onions
Chopped coriander

Instructions

Step 1:
Warm a non-stick frying pan on a medium heat. Coat the pan in oil. Whisk the eggs and cook like an omelette for a minute, then using a spatula break up the eggs into bits. Transfer to a bowl. Wipe out the pan.

Step 2:
Chop the Viči surimi sticks into small pieces. Warm the frying pan again and coat with oil. Pour in the cooked rice and fry for a minute, then add the carrot, peas and seafood pieces and cook for another minute. Pour in the soy sauce stir to combine, add the cooked egg and finish with sesame oil. Top with finely chopped spring onions and coriander if you wish.

Taste and serve immediately.
