Pink Shrimp Fried Rice
Ingredients
- 1 1/2 cups of pink shrimp
- 2 tbsp of spring onions (more for topping)
- 2 garlic cloves
- 1 tbsp of olive oil
- 2 eggs
- 1 small red onion chopped into small pieces
- 2 medium sized carrots chopped into small pieces
- 1 small red bell pepper chopped into small pieces
- 1/2 cup of corn
- 1/2 cup of frozen peas
- Fresh parsley
- 1 tsp of lemon pepper
- 1 tbsp of Worcestershire sauce
- 1 cup of cooked rice
- Salt and pepper
Instructions
1. In a pan add olive oil , the shrimp, spring onions, garlic, salt and pepper. Let it cook for a few minutes and set aside.
2. In the same pan add all your veggies, lemon pepper, Worcestershire sauce, salt and pepper. Cook the veggies until tender.
3. With a spatula move the veggies on the side of the pan and scrambled the eggs.
4. Add the shrimp and rice. Mix well.
5. Serve it with fresh parsley on top and raw spring onion.
