Surimi Toastie with Avocado & Quail Egg

Ingredients

For 4 toasties you will need:

  • 4 VICI Surimi Seafood Sticks
  • 4 slices of ciabatta bread
  • 4 quail eggs
  • small radish (for serving)
  • oil
  • salt & pepper to taste

For the avocado spread you will need:

  • 1 ripe avocado
  • 1 tablespoon of natural yoghurt
  • 1 clove of garlic
  • splash of lemon juice
  • salt & pepper to taste

Do you fancy trying something new for your breakfast or brunch? Why not try a Surimi toastie with avocado and quail egg for a nutritious meal that is rich in protein?!

  1. Boil the quail eggs for 3 1/2 minutes, for soft boiled eggs
  2. Add the avocado and the rest of the ingredients for the spread to a pestle and mortar then grind to a creamy consistency
  3. Add a slice of ciabatta bread to hot pan with a drizzle of oil and fry on both sides.
  4. Remove the ciabatta and spread the avocado on top.
  5. Tear the surimi between your fingers and place on top with the halved egg and thinly sliced radish.
  6. Add some salt & pepper to taste and enjoy your Surimi toastie with avocado and quail egg!
