Surimi Toastie with Avocado & Quail Egg
Ingredients
For 4 toasties you will need:
- 4 VICI Surimi Seafood Sticks
- 4 slices of ciabatta bread
- 4 quail eggs
- small radish (for serving)
- oil
- salt & pepper to taste
For the avocado spread you will need:
- 1 ripe avocado
- 1 tablespoon of natural yoghurt
- 1 clove of garlic
- splash of lemon juice
- salt & pepper to taste

Do you fancy trying something new for your breakfast or brunch? Why not try a Surimi toastie with avocado and quail egg for a nutritious meal that is rich in protein?!
- Boil the quail eggs for 3 1/2 minutes, for soft boiled eggs
- Add the avocado and the rest of the ingredients for the spread to a pestle and mortar then grind to a creamy consistency
- Add a slice of ciabatta bread to hot pan with a drizzle of oil and fry on both sides.
- Remove the ciabatta and spread the avocado on top.
- Tear the surimi between your fingers and place on top with the halved egg and thinly sliced radish.
- Add some salt & pepper to taste and enjoy your Surimi toastie with avocado and quail egg!
