Beyond Steak Mexican-Style Burrito Bowl
Ingredients
- 160g Beyond Steak Pieces
- 1 tbsp olive oil
- 1/2 green pepper, diced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1/2 tsp chilli powder
- 1 corn on the cob, kernels removed
- 1 red chilli
- 1 lime, zested and juiced
- 1 avocado
- 2 x 220g sachet microwave spicy rice
- 10 cherry tomatoes, halved
- 60g tinned black beans, drained and rinsed
- Handful of salad leaves
- Chopped coriander, to garnish

Looking for a colourful meal that’s packed with flavour and ready in under 30 minutes? This Mexican-Style Beyond Steak Bowl combines juicy Beyond Steak Pieces with fluffy rice, fresh vegetables, creamy avocado and zesty toppings for a satisfying lunch or dinner.
Perfect for meal prep or busy weeknights, this nourishing bowl is loaded with plant-based protein and vibrant Mexican-inspired flavours.
Method
- Heat the olive oil in a large frying pan over medium heat. Add the Beyond Steak Pieces, diced green pepper, spices, and a splash of water. Stir well to coat everything evenly.
- Cook for 4–5 minutes, stirring occasionally, until the Beyond Steak Pieces are golden and the spices become fragrant. If the pan starts to dry out or the spices begin to catch, add another splash of water.
- Meanwhile, heat a second frying pan over high heat. Add the sweetcorn kernels and cook for around 5 minutes, shaking the pan occasionally, until lightly charred.
- Stir the chopped red chilli, lime zest, juice from half the lime, and a pinch of salt into the charred corn. Mix well and set aside.
- Slice one avocado and set aside. Place the second avocado in a bowl with a pinch of salt and mash with a fork until smooth and creamy.
- Cook the microwave rice according to the packet instructions.
- To assemble the bowls, divide the cooked rice between serving bowls and add a handful of mixed salad leaves to each.
- Top with the cooked Beyond Steak Pieces, charred corn salsa, sliced avocado, cherry tomatoes, black beans, and a spoonful of smashed avocado.
- Finish with freshly chopped coriander and serve with the remaining lime cut into wedges for squeezing over the bowl.
- Serve immediately and enjoy!
